A famous bakery from Fukuoka has just opened a store in Hong Kong, and their tiramisu melon pan is available exclusively in Hong Kong. The line to get in is extremely long, and I haven’t had the chance to try it yet. 🥹

In the meantime, I decided to recreate the bread myself, and it turned out superb!! I’ve also made a Matcha version🤩

Baking Note:
Melon Pan:
Milk (room temperature) 50g
Yeast 2g
Dissolve the yeast in milk
Bread flour 120g
Sugar 24g
Salt 1.5g
Egg 18g
Roughly mix
Pour the milk and rub the mixture together to form a dough
💡It might be a bit sticky at first; just keep kneading
💡If the dough feels too dry, wet your hands and knead it, as different brands of flour absorb the amount of liquid differently
Unsalted butter (soften) 18g
Kneading the butter into the dough
Continue kneading until a thin film forms
💡Making it by hand may take a few minutes, but it's a great reason to exercise🏃🤣
After a nice and smooth dough form,
Spray water on the dough surface or wet it by hand
🍞First fermentation: Cover the dough and allow it to rest at 25-28°C for one hour

Cookies Pastry
Unsalted butter (soften) 40g
Icing sugar 20g
Beat until the mixture is a light color and has a creamy texture.
Salt 0.5g
Egg 10g
Dissolve the salt in the egg, then mix the egg into the buttercream.
Cake flour 57g
Cornstarch 5g
Almond flour 10g

Sugar (for coating)
I replaced the sugar with almond flour to make it less sweet

🍞Second fermentation: Rest at 30-32°C for one hour
🔥Preheat oven to 180°C
🔥Bake: 180°C for around 15mins

Mascarpone Custard Cream:
Condensed milk 5g
Mascarpone(soften) 50g
Mix
Yolk 1
Sugar 10g
Cornstarch 3g
Mix
Unsalted butter 3g
Heavy cream 20g
Melt the butter in a saucepan over low heat until it turns brown (because the portion of butter is small)
💡browned the butter to enhance its flavor
Keep heating and stir in the cream
Gradually pour the cream into the egg mixture and mix well
Pour the mixture back into the pot and heat it over low heat
Keep stirring until it becomes slightly thick and smooth
Heavy cream 20g
Whisk the cream until soft peaks form
Combine the egg mixture with the cream cheese
Combine it with the mascarpone
❄️Froze the cream overnight
