Delicious Jamaican CURRY POTATOES With BUTTER BEANS

In my quest to good health, I've stepped out of my comfort zone into the unfamiliar territory of the meatless dishes. I'm totally enjoying this journey however. Here's my latest take folks, Curry Potatoes with Butter Beans. I had this with some corn tortillas however you could use nan bread or roti or rice to dive into this flavorful dish!
I do hope you get to try this in your neck of the woods.

List Of Ingredients
5 medium/large white potatoes (skin optional)
1/2 chocho
1/2 white onion
white part of 1 stalk of scallion
2 diced celery stalks
1 large carrot
5 garlic cloves
5 thyme sprigs
green part of 1 stalk of scallion
coriander/ Italian parsley
1 can of drained and washed butter beans
1 can of Coconut milk (Grace)
Ground spices:
Cayenne pepper
Cumin
coriander
Curry (Grace Jamaican Style)
Curry (Beta Flava Original)
Garam Masala
Adobo all purpose
tumeric
Coconut Oil (2 tbsp)l
Green Paste (DIY see video)
Ginger Garlic Paste (DIY see video)
Pimento Seeds /powder
