To celebrate World Microbiome Day 2021, APC Microbiome Ireland SFI Research Centre is delighted to present an in-conversation interview with celebrity chef Darina Allen, and APC researcher John Leech.
Linking with this year’s theme for World Microbiome Day - Sustainability - John and Darina talk about how to start growing and fermenting your own foods at home and making the most out of unused food.

About Darina Allen:
Darina established Ballymaloe Cookery School in 1983 with her brother Rory O'Connell. Author of over 10 books and presenter on 6 Television series, her main passion and her daily task is to impart her knowledge to the students at the Ballymaloe Cookery School.

About John Leech:
John is a PhD student at APC Microbiome Ireland SFI Research Centre based in Teagasc Food Research and a research officer with MASTER.
