HISTORY:
There’s a lot to uncover on Margarita. The first thing you should know is the build of this drink. It actually means something! This cocktail is in the sour family. “Sours” consist of Spirit, citrus, and sweetener. Margarita means daisy in Spanish. Daisy, a cocktail that first appeared in Jerry Thomas' "Bartender's Guide", 1862. Daisy is made with Gin, Lemon Juice, Curaço and topped with club soda. See the similarities in the ingredients? Both the Margarita and the Daisy are cocktails in the sour family. According to history, Daisy was very popular in the 1930s, and around this time we see for the first time a Tequila Daisy.

But ok where does the Margarita come from? There are many people who claim to have invented this cocktail. Some origins that I know of, which are.
1. The Margarita was invented in 1930 by a woman named Doña Bertha, owner of Bertha’s bar in Taxco, Mexico
2. The Margarita was invented by a guy named Daniel “Danny” Negrete in 1936 while he was working at Garci Crespo Hotel in Puebla Mexico. His lady liked salt on her cocktails. But does that mean that we would have to give credit to his girlfriend then?
3. Back in the 1930s, Vernon Underwood, the president of a liquor distribution company that starter importing and distributing Cuervo tequila, had asked a Head Bartender from a bar in Los Angeles to create a cocktail with this new spirit that was brought to America. Then he named the drink after his wife Margaret (Margarita).

Whichever story is true, it is undeniable that the Margarita is arguably the most popular cocktail in the United States. And the popularity comes from Pop culture embracing tequila brands, advertisement push by some tequila brands, and the introduction of a variation to the classic Margarita, the Tommy's Margarita.

Tommy's Margarita was created in 1987/1988 by bartender and tequila expert, Julio Bermejo. This drink was named after his family's restaurant and bar, Tommy's Mexican Restaurant (EST. 1965) in San Francisco, CA. This place is a true family restaurant. Julio is one of five children, all of his family has been involved in the restaurant in some shape or form. The drink appears on menus all around the world. And in turn, this family spot has become the "mecca" for enthusiasts and tourists alike to visit and have the original drink. Tommy's Margarita switches the orange-flavored liqueur with Agave syrup. The best part of the drink is being served with plenty of tortillas and chips. This bar also has one of the largest selection of 100% Agave spirits in the US. This drink is perfect to try with different types of tequila. You will taste the difference.

RECIPE:
Classic Margarita
1.5oz (45ml) Tequila Blanc, 100% Agave
1oz (30ml) Fresh Lime Juice
.75oz (22.5ml) Orange Liqueur
.25oz (7.5ml) Agave Nectar
-Combine all the ingredients in a shaker, shake with ice, double strain into double rocks or coupe glass (with or without salt) and garnish with a lime wedge or lime wheel

Tommy's Margarita (Batched)
1.5cups (360ml) Tequila Blanco, 100% Agave
6oz (180ml) Fresh Lime Juice
3oz (90ml) Agave nectar
6oz (180ml) Filtered Water

Tommy's Margarita (Single Serving)
2oz Tequila Blanco, 100% Agave
1oz (30) Fresh Lime Juice
.5oz (15ml) Agave nectar
-Combine all the ingredients in a shaker, shake with ice, double strain into double rocks or coupe glass (with or without salt) and garnish with a lime wedge or lime wheel
