Arriving from Cuba on the tail of a hurricane, Carlos Valdes’ family of commercial fishermen settled first in Key West, then closer to the stone crab fishery of Everglades City. As boat captain, Carlos learned to punch up his mother’s cooking, which led him to open Havana Café with his wife Dulce 15 years ago. Way off the well-beaten restaurant path, it draws fans during the high season with its brand of reinvented Cuban cuisine.

WGCU Public Media’s “Curious Cuisine” series tastes the rich, varied culinary scene in Southwest Florida that is rooted in the immigrant experience and Florida soil. It goes outside the mainstream to restaurants that explore the melting pot of Florida flavors.
