Panhaggerty Recipe - Great British Grub

This panhaggerty recipe comes from the northeast of England. Traditionally a poor man's dish, these days it makes a great vegetarian side dish. There is a version with meat called a panackelty, and I may well do one of those in future, but for now, give this a try and please let me know what you think 😊

Ingredients
2-3 onions (300g) thinly sliced
1.2kg floury potatoes thinly sliced
125g butter
250g extra mature cheddar (or similar)
Salt and pepper to taste (plenty of pepper)
