I know cooking on a budget is the worst! You might feel like you have to settle for rice and beans 7 days a week, But you couldn't be further from the truth! Cooking tasty budget meals is all about embracing your creativity. In this video i'll give some of the tips and tricks I use (being a broke student) as well as three example recipes. so you cant start budget cooking like a pro!

| RECIPES |

SPINACH AND HAM BREAKFAST LOAF (

Ingredients
12 eggs (2 for each day)
1 or 2 bell peppers
3 tbsp nonfat greek yogurt
Tsp black pepper
Tsp oregano
120g sliced turkey breast
60g (generous handful) of spinach

Method
1. Grease up or line a baking loaf tin (medium size)
2. Cover the entire bottom with finger slices of bell peppers
3. Crack all 12 eggs into a bowl and add greek yogurt and spices
Whisk thoroughly till combined
4. Tear up turkey breast slices and add to bowl
5. Sauté spinach in a pan for 1 minute and mix into bowl
6. Carefully pour mixture into baking tin and bake ay 180°C / 356°F
With fan for 40 minutes
7. cut into 12 slices and enjoy!


SHREDDED CHICKEN MEXICAN BURRITOS (476 cal - £1.19)

Ingredients
600g skinless boneless chicken breast
Tsp black pepper
Tsp garlic powder
Tsp paprika
Tsp salt
Tsp cumin
4 salad tomatoes
200g shredded lettuce
Small jar of jalapeños
1 can pinto beans in water
Sour-cream

Method
1. Season chicken breast with black pepper, garlic powder, paprika and salt
2. Fry for 3-4 minutes on each side till cooked
3. Dice salad tomatoes and shred lettuce
4. Shred cooked chicken using a baking mixer or two forks and set aside
5. Add a tsp of olive oil to plan and fry of jalapeños for 1 min
6. Add drained pinto beans and cumin, mix in cook for another 2 minutes
7. Spread tbsp sour-cream onto tortilla and layer on ingredients, use enough to last six days!
8. fold into a burrito and enjoy


CHICKEN AND CHORIZO JAMBALAYA

Ingredients
600g boneless skinless chicken breast
1 link spicy spanish chorizo
1 bunch of spring onions
2 bell peppers
1 can chopped tomatoes
500g dried rice
Tbsp tomato paste
900ml chicken stock
Tsp cumin
Tsp oregano
Tsp paprika

Method
1. Dice up chicken breast and slice chorizo into coins, then add to a pan with some olive oil
2. Fry for 5-7 minutes on medium to high heat
3. Thinly slice spring onions and bell peppers
4. Add the meat and vegetables to a bigger pan (wok) and sizzler for 2 minutes
5. Add in 2 tbsp tomato paste and stir, then add 500g dried rice, cook for another 1 minute
6. Add in 1 can chopped tomatoes, 900ml chicken stock and spices
7. Bring to boil and simmer for 10 minutes uncovered
8. Reduce heat and cover up for another 30 minutes
9. Fluff up and sprinkle on fresh spring onions
