Varhadi Mutton Rassa is a spicy and flavorful Maharashtrian curry made with tender pieces of mutton (goat meat) and a special spice mix. Here's a recipe to make it:

Ingredients:

500 grams mutton (goat meat)
2 onions, finely chopped
2 tomatoes, finely chopped
2 teaspoons ginger-garlic paste
2 teaspoons red chili powder
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon garam masala powder
1/4 cup grated coconut
4-5 dry red chilies
2-3 bay leaves
Salt, to taste
Oil, for cooking
Coriander leaves, for garnish
Instructions:

Wash the mutton well and cut it into small pieces.

In a pressure cooker, heat oil and add the bay leaves. Once they start to sizzle, add the chopped onions and fry till they turn golden brown.

Add the ginger-garlic paste and fry for a minute.

Add the chopped tomatoes and fry till they turn soft and mushy.

Add the mutton pieces and fry on high heat for a few minutes till the meat starts to brown.

Add the red chili powder, turmeric powder, cumin powder, coriander powder, garam masala powder, and salt. Mix well.

Add water, enough to cover the mutton pieces, and pressure cook for 4-5 whistles or until the meat is cooked.

Meanwhile, in a small pan, dry roast the grated coconut and dry red chilies till the coconut turns light brown.

Once the pressure is released, open the cooker and add the roasted coconut and red chilies. Mix well.

Cook on low heat for 5-10 minutes till the gravy thickens and the oil starts to separate.

Garnish with coriander leaves and serve hot with steamed rice or bhakri (Maharashtrian bread).
