So there are three ways that you could Harvest your bok choy ..
The first way you remove the whole plant and you have a beautiful bouquet of bok choy..

The second way you could cut 3-in above from the bottom of the root. this way the plant will regrow. cut and come again method , It does take a long time to grow back.

The third Way is where you remove just the bigger leaves from the outside. remove at least 3/4 of the plant and leave back quarter so the plant could keep growing. this is the best and the fastest way.. you could harvest every 4-6 days this way for a long time ...

When it comes down to harvesting a bok choy leaf you could Harvest at least 3 to 6 in for baby bok choy or you could Harvest 6 in plus for full mature leaf. your choice..
