Masala Vadai Recipe:

Chana Dal - 1 Cup
Onion (finely chopped) - 1 no
Green Chilli (finely chopped) - 2 nos
Ginger (finely chopped) - 1 inch
Curry leaves (chopped) - 1 tbsp
Coriander Leaves (chopped) - 1 tbsp
Salt - 1 tsp
Asafoetida (Hing) - A Pinch
Oil - For Frying

Cooking Instructions:

1. Wash and soak the chana dal in water for 2 hours.

2. Strain and add the dal to a mixer blend and pulse blend until coarse.

3. Transfer the dal to a bowl and add the remaining ingredients and mix well.

4. Form small lemon-sized roundels of the mixture and flatten them.

5. Deep fry the vadai in medium hot oil until golden brown and crispy.

Cooking Tips:

1. 2-3 tbsp of split urad dal can be soaked and added to make crispier vadai.

2. Variations can have any chopped greens like mint or spinach, cumin seeds, dry red chillies etc...
