The Most Amazing Tuna Tostadas 😍🇲🇽

Home Cooking Sessions: Tuna Tostadas. These are the perfect summer tostadas, with a fire roasted tomatillo and jalapeño salsa. Full recipe below! 👇🏽😍

1. Start with the tuna - you want 2-300g of sushi grade tuna. I picked up this beautiful chutoro from @nottinghillfishshop - insane colour gradient and buttery texture
2. Dice into cubes and add to a bowl - you want to dress this a little later, so once cubed, cover and leave in fridge
3. Grab some tomatillos, jalapeños, spring onion, white onion and garlic - season, drizzle with olive oil, then roast / grill till nicely charred
4. Add all of this to a food processor + 2 sliced avocados, juice of 1-2 limes, olive oil, sea salt, black pepp, handful corriander - blitz till smooth and taste / adjust accordingly - I go 3:2:1 tomatillo, avocado, jalapeños - I love lots of spring onion too, so I add some roasted, some raw
5. Finely slice some shallots and add to room temp oil, bring up to med-high and fry till golden and crisp - remove, drain and season
6. Bring the onion oil up to 325f and carefully place in your corn tortillas one at a time, fry till golden and crisp, then drain and season
7. Now dress your tuna - add a splash of ponzu, olive oil, chives and lime zest, toss to coat
8. Assemble: add a little tomatillo salsa to the crispy tostada, top with some coriander and sliced jalapeño, followed by a heap of your diced tuna, black and white sesame seeds, the crispy onions and finally, sliced spring onion
9. Add a squeeze of lime and enjoy right away!

This one’s so fresh and delicious. You can dial up the flavours of the salsa with more or less heat / acidity / creaminess. I served these the other week as a sort of build-your-own on the table with some friends! Works a treat. Enjoy! #notoriousfoodie 🙅🏽‍♂️
