Recipe :
Dhaba Style Mix Veg
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Serves: 4

Ingredients:
2 Potatoes
1 cauliflower
8-10 Beans
2 carrots
½ cup shelled Peas
1 large Onion
2 Tomatoes
½ cup Tomato puree
Ginger garlic paste
Kasuri methi
Red chili powder
Garam masala
Coriander powder
Turmeric
Oil as required
Coriander seeds
3-4 whole red chilies
2” cinnamon stick
2 black cardamoms
4 cloves
1 tsp cumin seeds
Bay leaves

Method:
Peel potatoes and cut into cubes. Cut cauliflower into florets. Cut beans into diamonds. Peel and cut carrots into slices.
Finely chop the onions and the tomatoes separately.
Dry roast the coriander seeds, cumin seeds, cinnamon stick, black cardamom, whole red chiles and cloves till lightly fragrant. Cool and grind to a fine powder.
Heat at least 2” oil in a pan. One by one, fry the vegetables in medium hot oil till half done. Remove on absorbent paper and set aside.
Heat 2 tbsp oil in a pan. Add the chopped onions, and cook over medium heat till lightly golden. Add the dry powdered spices, mix well, add the chopped tomatoes, ginger garlic paste and mix well. Add the tomato puree, ½ cup water, mix, cover and allow to cook for 4-5 minutes till the tomatoes and soft and pulpy. Remove lid and cook till oil floats on top. Add in the fried vegetables, green peas and salt to taste and mix well. Cook for a couple of minutes for the vegetables to absorb in all the flavour. Add the crushed kasuri methi and mix well. Serve hot.
