As promised here is my Baba ghanoush inspired recipe that is easy and delicious and 100% mammal free, making it safe for me to eat. This tick infection (alpha gal) has made eating very challenging and I now have to make everything from scratch, because I’m highly allergic to anything from a mammal including meat, dairy, processed sugar, and much more. I miss eating at restaurants and socializing over a meal, but growing these veggies helps keep me motivated.
