Today I will make tricolor Tiranga dosa without using any food colours, I will use natural colours that found in our kitchen.
Ingredients-
3 cups Idli rice
1 cup urad dal
1 tablespoon fenugreek seeds
Handful of green coriander
2 green chillies
1 tsp salt
250gm saffron colour carrots
Wash rice dal and fenugreek seeds 3-4 times ,then soak them all together for minimum 6 hours or overnight .
Now transfer it in grinding jar, add minimum cold water, to make fine paste. Grind soaked rise in batches. Transfer this paste in Big Bowl. Cover the lid and keep it at warm place for fermentation for 15 -18 hours or overnight. Fermentation depends upon weather.
When this batter is fermented, take some batter in separate bowl, add salt to taste, keep aside.
Peel and wash 250 gram carrot then roughly chopped. Transfer these carrots in chutney jar, add minimum water and grind it to make fine paste, keep aside.
Add coriander leaves with stems, green chillies, salt to taste, and grind it to make fine chutney keep aside.
Divide white dosa batter into 3 portions.
1 should be little more in quantity that will be green batter for outer circle.
Add carrot paste in first bowl.
Add green chutney into 2nd bowl .
Third will be white, add some water in white batter, to make it like dosa consistency .
Mix all batter very well keep aside.
Heat non stick tawa on very low flame. Pour saffron batter on tawa, move-in circular motion, then pour white batter and spread with touching the saffron circle. Now pour green batter with touching white circle and spread. Pour 1 tsp oil on dosa. Cook dosa on low flame until upper surface look dry. When it cook perfectly remove from tava and serve with sambhar, aloo masala ,coconut chutney, green chutney. This dosa is very tasty because of the flavour of green chutney.
Make this recipe at home in natural colours.
enjoy it with coconut chutney and sambar. You you can make in breakfast or in your kids tiffin box.
