This soup is perfect for busy moms, anxious minds, cold days, and anyone craving comfort and calm.
Creamy Chicken & White Bean Soup
Ingredients:
• 4 tbsp butter
• 1 white onion, minced
• 2 tbsp minced garlic
• 1 cup carrots, finely diced
• 1 cup celery, finely diced
• 2 tsp rosemary
• 2 tsp thyme
• 2 tsp sage
• 1 tsp salt
• 1 tsp pepper
• ¼ cup flour
• 2 lb chicken breast or tenders
• 1 qt chicken broth
• 1 qt water
• 2 (15 oz) cans Great Northern beans, drained & divided
• 2 cups heavy cream
• 2 cups spinach, roughly chopped
Instructions with Cooking Therapy
In a large stock pot over medium-high heat, melt the butter.
Add onion, garlic, carrots, and celery. Sauté for about 5 minutes.
Add rosemary, thyme, sage, salt, and pepper. Sauté another 5 minutes, then stir in flour and cook 5 minutes more.
Take a deep breath in… long exhale out.
Try a 6-4-8 breath — inhale 6, hold 4, exhale 8.
Add chicken, water, chicken broth, and one can of beans.
Bring to a gentle bubble, then reduce heat to medium and cook for 30 minutes.
Affirmation:
“Softening is not weakness.”
Where can you release control today?
Where can you trust instead of grip?
Remove chicken from soup and shred or chop.
Set a 15-minute worry timer — this is your only allowed worry/control time.
Let yourself think everything while you shred. When the timer ends, you release it.
Remove half the soup and blend until smooth.
Add heavy cream to the blender, blend again, then return to the pot.
Add remaining beans and simmer 10 minutes more.
Stir in spinach and remove from heat. Let rest 5 minutes before serving.
