Ingredients'
2 glasses of water
1 tablespoon of butter
1 small green cardamom (elaichi)
1 small piece of cinnamon (darchini)
1/2 tablespoon of pink salt
250 grams of masoor (red lentils)
1 small onion
2 small tomatoes
1 tablespoon of ginger and garlic paste
2 green chilies
1/2 tablespoon of salt
1/2 tablespoon of red chili powder
Red chili flakes (to taste)
Dry coriander powder (to taste)
Turmeric powder (to taste)
FOR TARKA PREPARATION:
1 teaspoon of cumin seeds (zeera)
2 tablespoons of minced garlic
1 big spoon (approximately 2 tablespoons) of cooking oil
Garam masala (to taste)

Direction'
1. Preparation of Lentils:

Rinse the masoor (red lentils) thoroughly under cold water until the water runs clear.
In a large pot, add 2 glasses of water and the rinsed lentils. Bring it to a boil.
Once it starts boiling, lower the heat to a simmer and cook until the lentils are soft and fully cooked. This may take about 20-30 minutes. Skim off any foam that forms on the surface.
Once the lentils are cooked, set them aside.
2. Sautéing the Aromatics:

In a separate pan, heat the cooking oil over medium heat.
Add the minced garlic and sauté until it turns golden brown.
Add the cumin seeds (zeera) and let them sizzle for a few seconds.
Add the small green cardamom (elaichi) and the small piece of cinnamon (darchini). Sauté briefly to release their aroma.
3. Adding Onions and Tomatoes:

Add the finely chopped small onion to the pan and sauté until it becomes translucent and starts to brown.
Add the ginger and garlic paste and cook for a couple of minutes until the raw smell disappears.
Add the finely chopped small tomatoes and cook until they become soft and the oil starts to separate.
4. Seasoning:

Now, add 1/2 tablespoon of salt, 1/2 tablespoon of red chili powder, red chili flakes (to taste), dry coriander powder (to taste), and turmeric powder (to taste). Mix well and cook for a few minutes.
5. Combining with Lentils:

Add the cooked lentils to the spiced onion-tomato mixture. Stir to combine.
6. Finishing Touch:

Add garam masala to taste and stir it into the lentils.
Add 1 tablespoon of butter and mix it in.
Adjust the seasoning, adding more salt or spices if needed.
7. Garnish:

Garnish with thinly sliced green chilies.
8. Final Touch:

Serve hot with rice or naan bread. Enjoy your homemade masoor dal !
