How to prepare
• To make this I have taken a packet of digestive biscuits. take a bowl and make small pieces of the biscuits. I am using here about 12 biscuits.
• Take a mixer and grind them to make the crumb. this will be the base of our cheesecake. now add 1/2 cup of molten salted butter to the crumbs and mix thoroughly.
• So once this is done, take a cake tin for cheesecake as it can be opened from the sides.
• Now line it with a butter paper in the bottom and also from the sides so that it comes out clean.
• So once the crumb is ready, put it in the tin to form the base. press the crumbs with the back of a glass, or you can even use a bowl or a potato masher.
• Put it in the refrigerator for an hour and let it set. in the mean time let’s prepare the cream. for this I have taken half cup of whipping cream and beat or whip it till it becomes soft peak. to this add 4 tsp of sugar and mix well.
• I have taken here amul cream cheese and add this in the whipped cream. mix well and them use a beater to make it smooth and creamy. look at the texture, it silky smooth and creamy. to this add 1 tsp of vanilla essence and mix well.
• But this time your cake base is almost ready and set. take it out of the refrigerator and pour the cream on top. smoothen it from all sides. once done place it back in the refrigerator of an hour or 2.
• Now let’s prepare the caramel. for this take a pan and add 1/2 cup of sugar to it once it starts caramelizing and turns golden brown add a spoon of salted butter.
• The salt butter adds to the taste of caramel. now add 1/4 cup of cream to the caramel and mix thoroughly.
• Let it cool for some time and then take your cheesecake and pour the caramel on top of it and spread evenly. once again place the cake into the refrigerator for 5-6 hrs and let it set.
• I placed it overnight and my cheesecake is ready, I had saved some of my crumbs which I will use to decorate my cheesecake, this is optional.
