Chicken Dhansak!!! One of the healthy and delicious Parsi curries has been my favorite way of devouring a chicken curry. It's a nutritious way of cooking with chicken and vegetables. Lentils add creaminess and tamarind fruitiness, an important element in Parsi recipes.
A hybrid version of Persia and Indian, Dhansak is a true winner. I hope that you all like this one. Let me know if any questions at all.
Serves 3-4
500g chicken cut into cubes
2-3 bay leaves
3-4 onions thinly sliced (medium-sized)
2 tbsp ginger and garlic paste
2 tsp turmeric powder
2 tbsp pulp of fresh tamarind
2 tsp dried fenugreek leaves
1 tsp salt
Water as required
Spice Mix
2 tbsp coriander seeds
1 tbsp cumin seeds
5-6 cloves
5-6 black peppercorns
3 black cardamons
5 green cardamons
3 inches of cinnamon
1 star anise
3-4 bay leaves
Vegetables
1 potato
2 baby aubergines
2 carrots
2 onions
1 cup spinach
Lentil Mix
1/4 cup red lentils
1/4 cup pigeon pea lentils
1/4 cup moong lentils
3-4 onions thinly sliced (medium-sized)
