Son of R. Panduranga Setty, who is said to have begun the Bangarpet Chaat tradition in 1974 in Bangarapet, named so (Bangar = gold, pete = town) for its importance as a town that connected the erstwhile Kolar gold fields to Bengaluru, 80 kilometres away, young Ramesh, wasn’t happy just continuing with the family legacy. A desire to create something new led to the invention of the ‘white paani’, a clear liquid that though as innocuous-looking as water, packs a potent, spicy punch. And thus began the tradition of the Bangarpet Paani Puri, that has spawned a few hundred namesakes in Karnataka. Ramesh however continues to operate out of his tiny shop in a bylane in Bangarapet, serving customers personally and experimenting constantly to add to his spicy, tangy repertoire. I spend an evening with him, tasting his wares, and return impressed with his childlike enthusiasm that doesn’t seem to have waned in the least despite being in the business for nearly four decades, his latest creation, a pizza inspired paani puri! White Paani Puri
A simple assemblage of green peas, onions, carrots and coriander, stuffed in a semolina and flour puri, topped with the potent ‘white paani’. The spiciness of paani though is toned down by the creaminess of the peas and the crunch of the onions. A simple, clean flavoured paani puri that allows one to appreciate every component singularly, as well as in its completeness.

Special Dahi Puri
Embellished with rose petals, this chaat is a riot of flavours and textures. The crispiness of the chaat components and the spice of the masala play second fiddle to the creamy, sweet richness of the yoghurt that is fortified with Horlicks, milk powder and sugar.

Floating Paani Puri
The floating paani puri is a spicy affair, the spicy white paani goes into the puri and also floats the puri. The moist crispness of the puri is endearing as is the crunch of the spiced peanuts and the sev, despite the fresh crunch of the onion, cucumber and tomato, there is no getting away from the chilli heat of the sea of white paani.

Tikki Masala Bangarpet
A take on the Bengaluru masala puri, this is puri topped with spicy chutney, sweet chutney, peas, garam masala, squeeze of lime, onions, carrots, coriander, sev and puffed rice. It has all the components that you would expect to find in a chaat without being overdressed!

The flat papdi base for this chaat is fried in ghee which gives it a rich, ‘biscuity’ bite embellished with the nuttiness of sesame seeds. You can taste the edge of garlic in the chutney that the fresh ingredients are tossed in.

A typical bhel but with the addition of the peas gravy that goes into every plat of chaat here, I found this rendered the puffed rice soggy and that didn’t quite work for me.
