I made this fabulous plum jam during summer in Japan. My aunt got a plum tree and I have access to plenty of organic plums. The jam is powerfully sour & sweet in an addictive way. Ume plums got citric acid that works as potent anti-oxidant. I don't see ume plums in the U.S. unfortunately. They are popular in Japan, usually pickled in salt (ume-boshi) or made into plum wine (ume-shu). Credit to my 86-year-old farther for helping out!
