Ingredients:
500 grams of goat/lamb meat, 400 grams of onion, 1 tablespoon of ginger garlic paste, approx a half cup of mustard oil, 2-3 tablespoons of clarified butter(Desi Ghee). 4-5 whole garlic bulbs, 5-6 whole red chilies, 2 big cardamoms, 1 big piece of cinnamon, 2 bay leaves, 8-19 cloves, 2 cardamoms, a half flower of mace, 12-15 peppercorns, 1 tablespoon of coriander powder, a half teaspoon of turmeric powder, 1 teaspoon of cumin powder, a half tablespoon of Garam Masala powder, a half teaspoon of Kashmiri chili powder, salt as per taste, coriander leaves to garnish.

आज़मगढ़ी मटन अन्यथा बिहारी मटन के कुछ व्यंजनों में साबुत लहसुन की गांठों को मटन के साथ पकाया जाता है। इनको मांस के साथ परोसा जाता है। खाते समय इनको मसलकर इनका गूदा ग्रेवी में मिलाकर खाने का चलन है जिससे कि ग्रेवी और भी अधिक स्वादिष्ट लगती है।
