This French carrot salad is a classic from everyday French home cooking but with a twist. It’s fresh, crunchy, and full of zing from the lemon Dijon dressing. If you're walnut aren't French giving them a quick toast will enhance them. I like to top it with a poached egg for a light meal, I do that a lot for a quick healthy lunch! So simple, yet so full of flavour. My dog Kenji wasn't impressed but I'm sure you will be. You’ve got to try this!
