TWISTED NO-MAYO DEVILED EGGS

These Avocado Deviled Eggs are a tasty twist on the classic, adding creamy, buttery avocado and fresh lime juice and cilantro for a no-mayo, light and bright alternative to traditional deviled eggs. By cutting them a bit different, coloring them and putting an egg flower on top adds some unique character to this traditional recipe.

INGREDIENTS:
6 - large eggs
1 - avocado halved, pitted, and peeled
2 - tablespoons chopped fresh cilantro leaves
2 -tablespoons chopped fresh chives2
2 - teaspoons freshly squeezed lime juice
Pinch of garlic powder
Salt and black pepper to taste
Smoked paprika, fresh cracked black pepper, or everything but bagel seasoning
Chopped cilantro & chives for garnish

Optional food coloring, water & 1/2 teaspoon white vinegar

Instructions
Boil your eggs traditionally or use your instant pot.
If using your instant pot, place the trivet in instant pot
Add 1 cup water & 1 teaspoon white vinegar to instant pot
Place eggs on rack in instant pot, set to egg setting for 5 minutes.
Slow release for 5 minutes then place in cold water and ice for a few minutes and peel.
Cut eggs in 1/2 and put yokes in a small bowl.
Add avocado, lime juice, cilantro, chives, garlic powder and salt & pepper in bowl with yokes and mash, mix until creamy with fork.
If coloring eggs:
Use 8 oz water 1/2 teaspoon white vinegar & food coloring to a cup. Add white part of boiled eggs, leave as long as you would like until desired color. Remove and dry,
Place egg yoke mixture in ziplock or piping bag and snip 1 corner tip and pipe into each egg.
Top with paprika, pepper & everything but the bagel seasoning, chopped Cilantro & chives.
