Southern Family Cooking & Farm Chores in the hills of Appalachia.
In today's video I share my thoughts on a new planner, we make a quick supper, feed the chickens, sweep the porches, and clean up the yard.
The next morning Titus tries out a new flatbread recipe and goes out to take care of the horses while we make some boiled eggs, egg salad, and more lemon muffins!

Lemon Chia Seed Muffins
Ingredients:
1 3/4 cup all-purpose flour
1/2 cup coconut sugar, or white sugar
3 TB chia seeds
1 1/2 TB lemon zest
3 TB lemon juice
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 TB melted butter
1 cup sour cream
1 beaten egg
2 tsp vanilla
2 TB milk

Directions:
Preheat oven to 375.
Spray or line a muffin tin.
In a large bowl combine the flour, sugar, chia seeds, lemon zest, baking powder, baking soda, and salt.
Add the butter, sour cream, egg, milk, and vanilla.
Scoop into prepared muffin tin.
Bake 18-22 minutes, until a toothpick inserted comes out clean.
