How to Make the Best Chicken Corn Chowder (Healthy & Delicious) 🌽🥣

Ingredients & Instructions
Serves 4
• 2 tablespoons extra virgin olive oil
• 1 medium onion, thinly sliced
• 3 cups chicken stock (Bouillon)
• 200g (7 ounces) potatoes, peeled and sliced
• 1 400g (14 ounce) tin of creamed style sweetcorn
• 1 400g (14 ounce) tin of chickpeas, rinsed and drained
• 2 tablespoons Indian seasoning or 1 tsp curry powder
• 200g (7 ounces) cooked, shredded or sliced chicken meat
• 2 tsp Italian flat leaf parsley, chopped
• 4 teaspoons mascarpone cheese or sour cream (optional)
1. In a large saucepan over medium heat, add oil and sweat onions for five minutes or until tender.
2. Add the Chicken Stock and potatoes and simmer for 25 minutes until potatoes are tender.
3. Remove from heat, blend in a food processor or with a stick blender until smooth.
4. Return to the pot and add sweetcorn, chickpeas, Indian seasoning, and cooked chicken meat.
5. Bring to a simmer again for 1 – 2 minutes and serve with freshly chopped Italian parsley and mascarpone or sour cream.
Simon Says: Chickpeas have a buttery, nutty flavor and creamy texture. Both canned and dried chickpeas have a low glycemic index which means that your body absorbs and digests them slowly which helps keep your blood sugar and insulin from going up too fast. So they are especially good for those with diabetes. The other great news with chickpeas is they contain a range of nutrients, including protein, which is necessary for bone, muscle, and skin health. Researchers have noted that the fiber in chickpeas may be responsible for the reduction in LDL cholesterol. Being high in dietary fiber they help with digestion and improve bowel movements. They can also play a role in the diet of people who want to prevent osteoporosis.
