Spicy Stir-Fried Bhindi (Okra) Recipe

Ingredients:

1kg fresh bhindi (okra), washed and cut into 1-inch pieces
2 tablespoons oil
2 medium onion, finely chopped
2-3 garlic cloves, minced
1 teaspoon ginger, grated
2 medium tomatoes, chopped
1-2 green chilies, sliced (optional)
1 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon cumin powder
1 teaspoon red chili powder (adjust to taste)
Salt to taste
Fresh coriander leaves for garnish

Instructions:
Prepare the Bhindi: Wash the bhindi thoroughly and pat them dry with a clean kitchen towel. Make sure the bhindi is completely dry to avoid stickiness during cooking. Cut the bhindi into 1-inch pieces.
Prepare the Masala: In a pan, add the 2 tablespoon of oil. Add chopped onions and sauté until golden brown.
Cook the Bhindi: Add the bhindi pieces and sauté them until they are lightly browned and slightly crisp. This usually takes about 8-10 minutes. Remove the bhindi from the pan and set aside.
Add Aromatics: Add the minced garlic and grated ginger in that oil and fry it 1-2 minutes until the raw smell disappears.
