🍳 Ingredients (2 servings)
• 4 small eggs
• 2 tbsp milk
• ⅓ tbsp flour
• 2 tbsp butter
• Salt & freshly ground black pepper
Add-ins:
• 50 g grated zucchini
• 50 g smoked salmon
• 2 tbsp grated cheese (Parmesan, Cheddar, goat cheese, or your favourite)
• Fresh mint for garnish

🥣 Preparation
1. Crack the eggs into a bowl, season with salt and pepper, add milk and flour. Whisk with a fork for about 30 seconds, incorporating as much air as possible.
2. Heat a 20 cm pan over medium heat and melt the butter (it should sizzle, not brown).
3. Stir in the grated zucchini, then pour the egg mixture into the pan. Spread evenly.
4. As the base begins to set, gently push the edges toward the centre with a spatula, letting the raw egg flow into the gaps.
5. When almost set but still slightly moist on top, add the smoked salmon pieces and grated cheese. Cook for 30–60 seconds until the base is golden.
6. Fold the omelette in half and leave on the pan for another 15 seconds, just until the centre firms up.
7. Slide onto a plate, garnish with fresh mint, and serve immediately.

This omelette serves two and goes perfectly with wholegrain toast or a simple green salad with vinaigrette. A full and satisfying meal to kick off a busy day!
