Bamboo Shoots is a delicacy in the North Eastern Area of India and Asia. This curry is usually made in Sikkim. Maybe because it isnt easily available elsewhere, I really like bamboo shoot curry. It reminds me of my home back in Sikkim.

Serves 4

Ingredients:
Canned Bamboo Shoots - 450g
Potatoes - 2 medium
Onions - 3 medium/ 275g
Tomatoes - 2 medium/ 150g
Green Chillies - 5
Coriander Leaves - 1 Cup
Cumin Seeds - 1/2 tsp
Ginger Paste - 1/2 tbsp
Garlic Paste - 1/2 tbsp
Turmeric Powder - 1/2 tsp
Coriander Powder - 1 tbsp
Chilli Powder - 1 tsp
Salt - 2 1/2 tsp
Oil - 1/2 Cup
Water - 1/2 + 1/2 Cup + more if necessary
