Ingredients
Round baking pan Ø 24cm (9 inch) - (the measurement “cup” is always approx. information, as the original recipe is in grams)

Dough:
200g (1⅔ cups) flour
100g (½ cup) sugar
125g (½ cup) butter
2 packet of vanilla sugar (16g, 1 tablespoon)
1 egg yolk
½ (8g ≈ 1 tbsp) packet of baking powder

Filling:
350g (≈12,5 oz) plums
125g (½ cup) butter
200g (1 cup) sugar
4 egg yolks
5 egg whites
1 tbsp semolina
½ (18g, 3 tbsp) packet of vanilla pudding
2 organic lemons for the zest
500g (2 cups) low-fat curd (alternatively low fat cream cheese)
Pinch of salt

Fat for the baking pan


Preparation
Please always remember that every oven is different, so the baking times can always vary slightly
1. Wash, core and stone the plums.
2. Separate an egg and put the egg white aside.
3. Mix the flour, sugar, butter, vanilla sugar, egg yolk and baking powder to make a crumbly dough.
4. Line the bottom of a baking pan (approx. Ø 24cm / 9 inch) with baking paper and grease the edge.
5. Fill ⅔ of the dough into the baking pan, put the other third aside.
6. Spread the plums evenly onto the dough.
7. For the filling great the lemon peel.
8. Separate 4 eggs. Add the egg white, which is left over from the dough, to the other four egg whites and put aside.
9. Mix all the ingredients for the filling together, except the egg white. Beat everything together until foamy and until the sugar has dissolved.
10. Add a pinch of salt to the five egg whites, beat until stiff.
11. Fold the beaten egg white into the curd cream.
12. Pour the mixture on top of the plums.
13. Crumble the remaining crumbs over the filling so that everything is more or less covered.
14. Bake in the preheated oven on the bottom rack at 180°C conventional oven (Convection oven - fan oven 160°C / European gas level 3 / otherwise gas level 4) for 1 hour and 15 minutes. I recommend covering the cake slightly with aluminum foil after 45 minutes.
