Ingredients
बाजरे का आटा - Pearl Millet/Bajra Flour - 2 cup गेंहू आटा - Wheat Flour - 1/2 cup
नमक - Salt - 1/2 tbsp or as per taste
अज़वायन - Carom seeds - 1 pinch
जीरा - Cumin seeds - 1/4 tsp
हल्दी - Turmeric Powder - 1/2 tsp
लहसुन - Garlic Finely chopped - 1 tsp
तेल - Oil - 1 tsp
हरी मिर्च - Green Chilli - 2-3
हरी धनिया - Green Coriander leaves
घी - Ghee - as needed
गुनगुना पानी - Luke Warm Water
Method of Preparing the Dough:
In a mixing plate take Bajra flour and wheat flour + other ingredients except oil and ghee. Mix well. Gradually add Luke Warm water and kneed to form a touch dough. Coat with a little oil.
Cover the dough and let it rest for 10 minutes.
Knead the dough again for few minutes. Divide the dough into small balls.
Roll each ball between your palms to make them smooth with the help of dry flour.
On a clean surface, flatten a ball and roll it into a circular shape using a rolling pin.
The thickness can vary based on your preference.
Aim for a smooth, crack-free surface.You can cut it by a round cutter to give it a no - Crack outline.
Heat a griddle or tawa on medium-high heat.
Place the rolled roti on the hot tawa. When bubbles appear, flip it to cook the other side. Then cook it on direct flames. Cook until both sides have golden brown spots.
Serve the Bajre ki Roti hot with a dollop of ghee on top, onion, radish and special chutney.

Ingredients for Chutney :
लहसुन Garlic 8-10 Cloves
हरी धनिया - Green Coriander leaves - a little
हरी मिर्च - Green Chilli - 2
नमक - salt to taste
Roughly crush all together. Chutney is ready.

Tips: If the dough is too dry, add a little warm water. If too sticky, add more flour.
Always use Luke Warm water to kneed the dough.
Ajwain adds a distinct flavor and is good for your appetite, but you can omit it if you prefer. Ensure the tawa is hot enough to cook the roti quickly and give it a nice texture.
Cook Bajara roti on low flame to get perfectly cooked roti.
