Spicebush is one of my favorite plants. Each season offers a diggerent and equally wonderful opportunity for seasoning food and beverages.

Early fall is the time for the red berries, which some people have described as tasting like red peppercorns and others like a more intense allspice. Somewhere in between, I think, is a pretty close approximation of the flavor, but you will have to try some for yourself and let me know!

Make sure you dry them well and then keep them in the freezer or the fridge. The oils can go rapidly if left at room temperature for too long.

I use these in a lot of my cooking from: whole berries in soups, stews and wild wines; to ground up berries in dry rubs for meat and fish and cookies and pies.

They are truly a versatile flavor and will brighten up anything they flavor.
