材料 Ingredients:

350克浸發好的花膠 350g rehydrated fish maw
12隻冬菇 12 Shiitake mushrooms
250克小棠菜 250g Pak Choi

爆冬菇材料: Mushroom sauté garnish:
四粒紅蔥頭(拍鬆) 4 shallots (crushed)
一片厚切姜(拍鬆) 1 thick ginger slice (crushed)
三粒蒜頭 (拍鬆) 3 garlic cloves (crushed)

調味料: Seasoning:
15克片糖或赤砂糖 15g rock sugar / brown sugar
20克金華火腿 20g Jinghua ham
兩茶匙老抽 2 tsp dark soy sauce
一茶匙麻油 1 tsp sesame oil
一湯匙蠔油 1 TBS oyster sauce

生粉水:一湯匙生粉加一湯匙水 Potato starch mix: 1 TBS potato starch mix with 1 TBS water

小棠菜調味料: Pak Choi seasoning:
半茶匙糖 1/2 tsp sugar
半茶匙鹽 1/2 tsp salt
半茶匙米糠油 1/2 tsp rice bran oil

半茶匙麻油 1/2 tsp sesame oil
一湯匙紹興酒 1 TBS Shaoxing wine
500毫升雞湯 500ml chicken stock
留起浸發冬菇水 Keep soaked mushroom water
