Very simple buchujeon (chive pancake) that will satisfy your greasy cravings, while being somewhat healthy! Buchu means chive, jeon means pancake. You might've heard of pajeon or kimchi jeon. This is another variety of jeon!

Ingredients:
1 heaping cup cornstarch
1 heaping cup flour
1 heaping tsp salt
1 + 1/3 cups water
1.5 cups worth of chives
neutral oil for frying
handful of chopped onions
1 tbsp mirin
1.5 tbsp soy sauce
sesame seeds

Instructions:
1. Combine cornstarch, flour and salt. Mix in water, half at a time.
2. Cut chives into thirds (~3 inches long). Fold into the batter.
3. Heat a frying pan to medium, add around 1/4 cup oil.
4. Add a scoop of the batter and flatten it, so that every surface touches the pan and the oil.
5. Fry on both sides for 4-5 minutes, until golden brown.
6. Repeat with the rest of the batter, adding oil as needed.
7. For the dipping sauce, combine onion, mirin, soy sauce and sesame seeds.
8. Enjoy your buchujeon!
