Prato da Casa, Stewed Octopus (Polvo Guisado) by Nancy Gaetano DIYwithnancyg Todos

Ingredients:
750 grams octopus
4 tablespoons of olive oil
1 medium onion
2 garlic cloves
1 tablespoon of pepper paste
1 teaspoon of paprika
½ teaspoon of black pepper
330 ml of beer
½ cup of red wine
½ teaspoon of salt
3 medium potatoes
Parsley
Directions:
Add water to a medium sized pot and add the octopus (cut into medium sized pieces) and being to a boil; drain water and set aside
Peel and cut the potatoes into bite sized pieces set aside
In a medium sized pot add olive oil, add onions and cook them down, add chopped garlic and mix, add beer, wine, salt, pepper, pepper paste, and paprika and bring to a boil. Add the octopus and cook until the sauce begins to thicken. Taste for salt and adjust to taste. Add the potatoes and 1 ½ cups of water and cook down. Add a couple of chopped parsley and stir.
Plate and garnish with chopped parsley.
