Baking with Wattleseed is easy! Try this fast ANZAC biscuit recipe, that is made even more Aussie using a sprinkle of Wattleseed! Ever thought how to use Wattleseed? Well, here's a fast and delicious way to use it.

This is a fun and delicious recipe that is completely child friendly, and is very quick! You'll have to hold yourself back from the delicious nutty flavour and the chewy texture you love! If you prefer a crunchier biscuit, leave them in the oven for an extra 2 minutes.

2 MINUTE - WATTLESEED ANZAC BISCUITS
INGREDIENTS:
125g Butter
150g Flour
110g Oats
110g Brown Sugar
5g Wattleseed (available at melbournebushfood.com.au)
70g Shredded Coconut
2 tbsp Honey (or Golden Syrup)
2 tbsp Water
1/2 tsp Bicarbonate Soda


METHOD:
Step 1. Set the oven to 180 degrees (or 350 degrees farenheit)
Step 2. Mix the flour, oats, sugar and coconut in a bowl and mix well.
Step 3. On a sauce pan over medium heat, melt the butter, then add the honey. Once dissolved, pour in the water. Wait until it starts bubbling, then add the bicarbonate soda. Wait until it turns white and fluffy, then remove from the heat.
Step 4. Pour the wattleseed ontop of the dry ingredients. Pour the butter mixture over the top and stir until completely combined.
Step 5. On the tray lined with baking paper, roll 5-7cm balls and place them on the tray. Press down to flatten. Continue until the tray is full.
Step 6. Place in the oven for 10-12 minutes for chewy ANZAC biscuits, or 12-15 for a more crunchy alternative.
Step 7. Let rest for 10 minutes. Enjoy!
