Here are the ingredients for Chicken Kulambu (South Indian-style chicken curry) for 1 kg of chicken at your home preperation:

For Marination:

• Chicken (1 kg, cut into medium-sized pieces)
• Turmeric powder (1/2 tsp)
• Salt (1/2 tsp)
• Lemon juice (1 tbsp, optional)

For the Kulambu:

• Oil (4-5 tbsp, preferably gingelly oil or coconut oil)
• Mustard seeds (1/2 tsp)
• Fennel seeds (1/2 tsp)
• Cinnamon stick (1 small piece)
• Cloves (2-3)
• Curry leaves (1 sprig)
• Onion (2 large, finely chopped)
• Green chilies (2-3, slit)
• Ginger-garlic paste (2 tbsp)
• Tomatoes (2 large, finely chopped)
• Salt (as needed)
• Water (2-3 cups, adjust as required)

Spice Powders:

• Turmeric powder (1/2 tsp)
• Red chili powder (1 1/2 tbsp)
• Coriander powder (2 tbsp)
• Garam masala powder (1/2 tsp)

To Grind (Kulambu Masala):

• Freshly grated coconut (1/4 cup)
• Fennel seeds (1/2 tsp)
• Poppy seeds (1 tsp, optional)
• Black peppercorns (1/2 tsp)

Garnish:

• Fresh coriander leaves (a handful, chopped)

Preparation Steps:

1. Marinate the chicken with turmeric powder, salt, and lemon juice for 15-30 minutes.
2. Grind the ingredients for the kulambu masala with a little water to a smooth paste and set aside.
3. Heat oil in a large pan, add mustard seeds, fennel seeds, cinnamon, cloves, and curry leaves.
4. Add chopped onions and green chilies; sauté until the onions are golden brown. Add ginger-garlic paste and sauté until the raw smell disappears.
5. Add tomatoes and cook until they are soft and mushy. Add the spice powders (turmeric, red chili, coriander, garam masala) and sauté for 2-3 minutes.
6. Add marinated chicken and cook until it changes color. Then, add the ground kulambu masala paste and mix well.
7. Pour in water and adjust the salt. Cover and cook until the chicken is tender, and the gravy reaches the desired consistency.
8. Garnish with chopped coriander leaves and serve hot with rice or parotta.
