INGREDIENTS:
6 boiled eggs
1 lb shrimp with shell on
5 cups water
2 tbsp cooking oil
1 lb ground pork
Salt, to taste (optional alternative: fish sauce)
1 medium onion, diced
5 garlic cloves, minced
2 tsp annatto powder
2 shrimp bouillon cubes
Cornstarch slurry (1 cup shrimp broth mixed with 4 tbsp cornstarch)
8 oz bihon noodles
Fried garlic
Crushed chichiron
Sliced green onions

INSTRUCTIONS:
1.) Boil eggs for 10 mins. Peel, slice and set aside.

2.) Boil shrimp for 2 minutes in 5 cups of water. Strain and reserve shrimp broth. Peel shrimp and set aside.

3.) In a large skillet, heat up cooking oil on medium high heat. Add ground pork and season with salt. Cook until brown, about 5 minutes.

4.) Next, add diced onions and minced garlic. Sauté for 2 minutes. Then add annatto powder and stir until well combined.

5.) Pour in 4 cups of reserved shrimp broth. Let it come to a boil then add shrimp bouillon cubes. Continue to boil until cubes dissolve. Taste test and season with salt or fish sauce as needed.

6.) Mix remaining 1 cup of shrimp broth with 4 tbsp of cornstarch. Stir until broth thickens.

7.) Bring a pot of water to boil, then add 8 oz of bihon noodles. Swish noodles around to separate, and boil for 5 minutes. Drain completely.

8.) Arrange some noodles on a plate and add generous spoonfuls of palabok sauce. Top with shrimp, sliced eggs, fried garlic, crushed chichiron and green onions. Drizzle calamansi or lemon juice. Enjoy!
