Описание к видео Swedish Tea-ring

This delicately delicious tea-ring that can be stuffed with a choice of spreads or fillings needed a comeback into my kitchen. I guess we are all too much into cinnamon rolls, I am not saying we shouldn't be as they are delicious too. But the Swedish tea ring is an equally wonderful tea delight.
And to my delight, this time I customized it to our holy month of Ramadan. Since dates are the most important snack that makes it to our iftar table every day. I smeared a creamy date paste inside the ring. With a tender and flavorful dough combined with dates and nuts, you will be truly delighted at your tea time. Give it a try.

Note: the recipe in the video is doubled. Also, the spaces between the ingredients list indicates that you need separate bowls for it.
Don’t brush it with egg before snipping and shaping otherwise it will become slippery and will give you a hard time like it did to me.

Swedish Tea Ring with Dates

List 1:
1¼ tsp dry yeast
2 tbsp lukewarm water
½ tsp sugar

List 2:
1 ⅓ cup all-purpose flour
½ tsp salt
6 tbsp butter- diced

List 3:
2 tbsp sour cream
1 ½ tbsp cream cheese softened
1 egg
2 tbsp sugar
½ tsp vanilla paste
About 1-2 tbsp more water for the kneading requirement

For the filling:
10 medjool dates
1 tbsp butter
1 tsp cinnamon
A pinch of sea salt
⅓ cup ground walnuts or pecans
1 egg for egg wash

Activate the yeast by combining the given quantities in List 1. Cover it and let it stand for 8-10 minutes.
Combine the dry ingredients along with diced butter. Using a pastry cutter mash and mix so the flour and butter mixture resembles a coarse mix.

Combine the list 3 ingredients in a mixing bowl until smooth.
Pour it over the flour and butter mix. Also, pour the activated yeast over it. Continue kneading it till a smooth dough forms. The dough should leave the bowl sides which will be the sign that it's ready.
Transfer the dough to a resting bowl and cover it. Refrigerate it overnight.

Next day, melt butter in a pan and add the pitted dates in there. Slowly heat it and mash it with a fork till the dates fall apart and become a paste. Add cinnamon and a pinch of sea salt. Cover with a lid and keep it warm till you spread your dough.

Spread the dough in a 10 by 18-inch long rectangle. Use dry flour dust for convenience. Spread the date paste on the dough leaving half an inch border. Sprinkle crushed nuts over it.

Start with the long edge and start rolling the dough into a log. Seam the edges and roll the log back into a circle. Pinch the edges to form a circle as in the video.
Transfer it to a baking tray by placing the seam side down. Place a small cup or a bowl in the center of the ring, which is optional by the way.
Snip it into 1 ½ inch parts with scissors. Don't cut it all the way, only cut ¾ of the way. Then twist the snipped parts (one twist) so the cut side touches the baking tray.

Cover it with a plastic wrap or a tea towel and let it double in size in a warm humid place.
Now brush it with egg wash thoroughly by doing a second round to get a deep golden color. Sprinkle it with your choice of seeds and bake at 350 F for 25 minutes.

Glaze it if you desire it more sweet. Enjoy with tea or coffee. May it be healthy for you!
