A quick recipe
🔥Mutton dalcha
To a pressure cooker add
1 cup (150 ml cup) toor dal,
1/4 cup Channa dal
200 gram mutton (with bones)
Shallots -7
Ginger garlic paste 1 tbsp
Coriander powder 1 tbsp
Chilli powder 2 tbsp
Turmeric powder 1/2 tbsp
Salt
2 cup water and pressure cook 10 whistle.
Now to a pan add 4 tbsp oil, bay leaf 1, cloves 3, cardamom 2, cinnamon 1/4 stick, fennel seeds 1/4 tsp.
Then add onion 1/4 cup, green chilli 1, curry leaves & sauté for 2 min.
Now add 1 tomato, 1/4 cup brinjal, 1/4 cup drumstick, 1 tbsp chilli powder, 1 cup water and cook for 10 min in low flame.
Now add 4 raw mango pieces, pressure cooked mutton & dal, tamarind juice 1/4 cup and boil for 5 min & add coriander leaves( check for salt level)
🔥Pepper chicken
To a pan add
Coriander seeds 1 tbsp
Cumin 1/4 tbsp
Fennel 1/4 tbsp
Pepper 2 tbsp sauté for 3 min and make a fine powder.
To a pan add 6 tbsp oil, 5 tbsp chopped onion, 1&1/4 tbsp ginger garlic paste 1 green chilli, curry leaves & sauté for 2 min.
Now add 250 gram chicken, 1 tbsp chilli powder, 1/4 tbsp turmeric powder, 1/2 tbsp Garam masala, salt and mix well.
Cook for 15 min and add prepared powder , lemon juice, coriander leaves & ghee( optional)
🔥Coconut milk rice
To a pressure cooker add 3 tbsp ghee, 1 bay leaf, 1 star anise, 1/4 inch cinnamon, 2 cardamom, 3 cloves, 1/4 tsp fennel seeds, 1/4 tsp cumin, 1 tsp pepper.
Then add 1 sliced onion, 2 green chilli, 1 tbsp ginger garlic paste, mint leaves, coriander leaves & sauté for 5 min.
Now add salt & 30 min soaked seeraga sambha rice 1 cup , coconut milk 1&1/4 cup and allow it to boil.
Now close the lid & pressure cook 1 whistle.
