In January, Rene Redzepi announced he was closing Noma – possibly the world’s most famous restaurant. The workplace culture and gruelling hours meant it was no longer sustainable – in the very broadest sense of the word.

With huge brigades working punishing shifts, sourcing ever more eclectic, expensive and environmentally damaging ingredients, and numerous head chefs being called out for abuse and harassment, can this kind of fine dining play a part in helping create a better food future or has had its day?
