Origins
It's hard to say where the traditional Buryan kebab originated, because it's still a hot debate between residents of Bitlis and Siirt. According to some historical sources, this dish appeared on the Ottoman royal table in the 17th century, when Sultan Murad IV discovered it on an expedition to Revan (present-day Yerevan). Although it is impossible to determine the exact origin of this dish, both Bitlis and Siirt made positive contributions to its development.
