I had a limited number of lemons and limes. Normally we do this by the gallon with the sugar and I will do two pints with the salt - we don't use the salt as often but when we do it's amazing.

Over time the color may darken a bit in the jars, but it is fine to use. Keep the sugar top on the fruit, and when you open a jar and start using it, just keep using until gone - no need to keep refilling with lemons and sugar, only if you top off a jar you are starting do you add more fruit and sugar. Not sure if I made that clear in the video.

Mandarins, grapefruit and oranges are really good this way too and make a nice cool drink on hot days if you pour it over ice and add some sparkling soda to it.

The possibilities are truly endless. I hope you give this a try.
