Cola Kombucha (Coke Alternative)
Ingredients:
2.5 liters of sweetened tea (black tea preferred, made with ½ cup organic cane sugar)
2 small kombucha SCOBYs
Spices for flavor: ⅛ teaspoon freshly ground nutmeg, ¼ teaspoon ground cinnamon, 1 tablespoon crushed coriander seeds, a pinch of ground clove, and a pinch of dried lavender (optional) or a fressh stalk
Zest of 1 lemon, 1 orange, and 1 lime (ensuring to avoid any white pith)
Optional: 2-3g citric acid for additional tartness
Method:
1. Spice Toasting: Lightly toast your spices to release their flavors.
2. Tea Preparation: Brew the tea, dissolve the sugar, and let it cool to room temperature. Infuse with the toasted spices and citrus peels.
3. First Fermentation: Add the SCOBY to the cooled tea in a 3L jar. Cover with a breathable cloth and let it ferment in a dark, room-temperature space for 7-10 days.
4. SCOBY Removal: After fermentation, remove the SCOBY and prepare it for storage in a SCOBY hotel.
5. Second Fermentation: Transfer the kombucha to air-tight bottles for carbonation, leaving some headspace. Let it ferment for 3-7 days.
6. Daily Burping: 'Burp' the bottles daily to release excess pressure.
7. Chill and Halt Fermentation* Refrigerate the kombucha to halt fermentation and enjoy chilled.

Orange Kvass (Fanta Alternative)
Ingredients:
250g rye bread, toasted
3 liters filtered water
⅓ cup organic cane sugar
Juice of 2 oranges,
and juice of 1 tangerine (optional)
1 tsp brewer's yeast (optional)
Method:
1. Bread Soaking: Soak the toasted rye bread in the water in a 3L jar for 24 hours to infuse it with flavor.
2. Straining and Sugar Addition: Strain out the bread, add sugar, and orangee juice.
3. Fermentation: Add the brewer's yeast (if using). Cover with a cloth and allow it to ferment at room temperature for 48 hours.
4.Bottling for Carbonation: Transfer to air-tight bottles, leaving some space at the top. Let it ferment for 2-4 days for carbonation.
5. Daily Burping: Open the bottles daily to release excess pressure.
6. Chill: Refrigerate to stop fermentation and serve cold.

2.5 liters filtered water for brewing

Then add the lemon and lime juice, sugar, the new batch of water and the activated kefir grains,

4. Second Fermentation: Strain and Transfer the flavored water kefir to air-tight bottles, leaving some space at the top. Let it ferment for another 24-48 hours for carbonation.
5. Daily Burping: Open the bottles daily to release excess pressure.
6. Chill: Refrigerate to halt fermentation and serve chilled.
