The manual paddle is attached directly to an internal conical valve, allowing for total control of the flow rate and, as a result, the amount of pressure being applied to the espresso. You can choose to start with a soft, 3-bar pre-infusion, pull a 6-bar shot, or slowly ramp down the pressure towards the end of a shot to mimic a traditional lever machine, all while receiving real-time information via the pressure gauge connected to the paddle.
