Ingredients :
• Alphonso Mangoes (ripe) – 3
• Ghee – 2 tbsp
• Cumin Seeds – 1 tsp
• Bay Leaves – 2
• Black Pepper – 1 tsp
• Cashew Nuts – 10-12
• Chopped Almonds – 1 tbsp
• Raisins – 1 tbsp
• Black Currants – 1 tbsp
• Fresh Grated Coconut – 1 cup
• Water – As required
• Coconut Milk – 1 cup
• Sugar – 2 tbsp
• Salt – 1 tsp
• Turmeric Powder – ½ tsp
• Basmati Rice (soaked) – 1½ cups
• Saffron – ½ tsp

Method:-

1. Peel ripe Alphonso mangoes and blend the pulp into a smooth puree.
2. Heat ghee in a pressure cooker. Add cumin seeds, bay leaves, and black peppercorns; sauté until fragrant.
3. Add chopped cashews, almonds, raisins, and black currants. Stir well.
4. Mix in grated coconut, mango puree, water, coconut milk, sugar, salt, and turmeric powder.
5. Add soaked basmati rice and a pinch of saffron. Combine gently.
6. Close the lid and pressure cook for 3 whistles on medium flame.
7. Let the pressure release naturally.
8. Open the lid, fluff the rice, and garnish with chopped nuts.
9. Serve warm and enjoy the sweet and tangy tropical delight!
