Lets make an tasty and Very healthy vegetarian curry for Lunch
This recipe is very rich in vitamins, Iron and protein and we can make it in a very simple and healthy way.
The ingredients are
• Rose Moog (Lal Chawli) or Moth bean – 500gm
• Red Spinach – 2 Bunch
• Oil – 1 tsp (Oil of your choice)
• Pearl Onion – 5 to nos (sliced)
• Salt to taste
For Coconut paste
• Grated Coconut – 1 cup
• Cumin Seed – 1 tsp
• Chopped garlic – 2 tsp
• Green Chilli – 2 Nos (Vary as per taste)
• Turmeric powder – ½ tsp
• Salt to taste
Grind above ingredients in a grinder using water to make a smooth paste
For seasoning (Optional)
• Oil – 1 Tbsp
• Mustard Seeds – 1 tsp
• Dried Red chillies – 2 nos
• Fresh curry leaves – 1 spring
