This recipe yields rich and tasty appams with lacy edges and a soft center.
You can pair these appams with coconut milk as I did or with any Kerala based savory side dishes like chicken curry, egg curry or any stew varieties.

INGREDIENTS

Raw rice - 2 cups ( 430 grams )
Warm water - 1/2 cup
Active dry yeast - 1 tsp
Sugar - 1.5 tsp
Water - 1 cup ( while grinding ) + 1/2 cup ( before making appams )
Shredded coconut - 1 cup ( 100 grams )
Cooked parboiled or sona masoori rice - 1 cup ( 130 grams )
Coconut milk - 2 cups ( 380 ml )
Sugar - 1/4 cup ( 55 grams )
Salt - 2 tsp or as per taste
