Classic Gingerbread Cookies Recipe

These classic Gingerbread Cookies are perfectly spiced, perfect for decorating, and easy to make! Soft in the middle with crisp edges, you can cut these Christmas cookies into gingerbread men, Christmas trees, snowflakes, stars, and more! I love all the holiday spices and decorating them is one of my favorite things to do!

GINGERBREAD COOKIE RECIPE
3 cups flour
1 teaspoon baking soda
1/4 teaspoon salt

3 teaspoons pumpkin pie spice
1 teaspoon ginger
OR:
1 teaspoon cinnamon
2 teaspoons ginger
1/4 teaspoon nutmeg

Sift together above ingredients

3/4 cup butter, room temp/softened
3/4 cup brown sugar

Cream together above ingredients

Then add:

3/4 cup molasses
1 egg
1 teaspoon vanilla

Add dry ingredients to wet, mix until almost combined, finish by hand. Chill dough for a minimum of 3 hours or overnight.

Bake at 350 for 8-11 minutes

FOR THE ICING:
3 cups powdered sugar, sifted
1/4 cup milk
2 tablespoons lig corn syrup
1/2 teaspoon vanilla
