Super delicious Arabic chicken biryani recipe
INGREDIENTS
Chicken - 600 gm
Basmati Rice - 2 & 1/2 cup
Ghee - 3 tbsp
Oil - 1 tbsp
Onion - 2 + 1
Crushed ginger - 1 tbsp
Crushed Garlic - 1 tbsp
Green chili - 1
1/2 of a tomato
1 medium sized potato
Cardamom , cinnamon , Cloves - 2 no.s
Dry lemon - 1
Chili powder - 1/2 tsp
Garam masala powder - 1/4 tsp
Pepper powder - 1/4 tsp
Turmeric powder - 1/4 tsp
Arabic masala powder - 1/2 tsp
Tomato paste - 1 tbsp
Yogurt - 1/4 cup
Salt to taste
mint and coriander leaves

1 tbsp rose water + 1 tbsp water +2-3 pinch saffron
METHOD
Wash and soak the rice for 20 minutes.
Heat ghee and oil , fry the onion to golden color , remove from the pan and set aside.To the same oil add spices ,dried lemon and chopped onion . saute until translucent.Add green chili , crushed ginger and garlic and saute until the raw smell gone. Add in the tomato and cook.Then all powders and tomato paste ,fry few seconds.Add yogurt , mix well and followed by add chicken pieces.fry few minutes , add water and salt and cook covered until chicken 80% cooked.Now add in the potato , continue cooking until they are completely cooked.If there is excess liquid just cook few more minutes to evaporate the liquid without placing the lid.
Cook the rice until 80% done.Then layer the chicken and rice .Sprinkle mint and coriander leaves , fried onion , garam masala powder in between the rice.On top sprinkle the saffron water and cook on very low flame for about 20-25 minutes.
