Kothimeera nilava pachadi | Coriander pickle | Kothimeera pickle | Coriander leaves pickle

Ingredients :
Bunch of coriander leaves
Fenugreek seeds - 1 Tsp
Mustard seeds - 2 Tsp
Oil - 1 Tbsp
Desi red chilies - 4 Nos
Oil - 1 Tbsp
Water - 1/2 Cup
Tamarind - 25 grams
Salt - 1/4 Cup
Groundnut oil/sesame oil - 1/2 Cup
Mustard seeds - 1 Tsp
Cumin seeds - 1/2 Tsp
Bengal gram - 1 Tsp
Urad dal - 1 Tsp
Desi red chilies - 4 Nos
Garlic cloves - 10 Nos
Pinch of Hing

Preparation :
Firstly, take a bunch of coriander leaves and wash them well and chop them short. Now, on a pan take fenugreek and mustard seeds and dry roast for 2 mins, and keep aside. now in the same pan clean it with a tissue and add 1 tbsp of oil and roast half a cup of desi red chilies. Roast well and keep aside.
Now, add another spoon of oil and saute the coriander leaves and keep aside. In the same pan, add half a cup of water, ad 25 grams of tamarind, cook well for 10 mins, and keep aside (tamarind must be boiled very well).
Now in a mixie jar take roasted fenugreek seeds and mustard seeds and roasted desi red chilies, then add 1/4 cup of salt and grind to a powder. Now add tamarind and saute coriander and grind to a paste.
Now in a pan take half a cup of groundnut oil/sesame oil to add mustard seeds cumin seeds Bengal gram urad dal and cook for a min, now add 4 desi red chilies and garlic cloves, and a pinch of thing (optional) .
Now let the tadka cool down and now add pickle to it. That's it tasty KOTHIMEERA NILAVA PACHADI / CORIANDER PICKLE is ready
